Buffalo Ranch Cauliflower Salad (Vegan and GF)

Ingredients:

1 head of cauliflower

Any items for salad (butter lettuce, roasted beets, avocado, corn, tomatoes)

Ranch Dressing (homemade or store-bought)

For the coating:

1 cup almond flour

1/2 teaspoon garlic powder

1 tsp smoked paprika

1/4 tsp (or more) cayenne

1 tsp salt

2 Tbsp potato starch

For dipping:

1/2 cup almond milk

  1. Preheat oven to 425. Place parchment on a baking sheet.

  2. Mix all the ingredients for the coating and place on a plate.

  3. Cut cauliflower into bite-sized pieces.

  4. Put almond milk into a bowl for easy dipping.

  5. Dip cauliflower into milk, then coat with mixture. Place on baking sheet.

  6. Bake for 25 mins or until golden.

Assemble salad, top with baked cauliflower, add vegan cheese.
